Pan Seared Lamb Shoulder Chops with Garlic Herb Butter

The second we saw shoulder chops hit the market, it was game on. Cast iron out, butter pulled from the fridge, zero debates about what was for dinner. That’s what a cut you’ve never cooked before does to you — it skips the whole “what are we making tonight” conversation entirely. Or at least, that’s how it works for us.

Lamb shoulder chops are the most underrated cut at the butcher counter. They’ve got more marbling than loin chops, more flavor per dollar than a rack, and they take to a hot cast-iron skillet like they were built for it. But they do have real connective tissue running through them, and the first batch made that clear fast. Pull them too early, and you’re chewing through fat. So we pushed the sear longer than we would with a loin chop and kept the butter baste going the whole time. The fat renders down, the tissue softens, and the herby buttery baste worked it’s umami magic.

Shoulder chops aren’t for everyone. But for those of us who believe the whole animal deserves a turn in the cast iron, this is the weeknight cut you didn’t know you were missing.

What is a Lamb Shoulder Chop

A lamb shoulder chop is cut from the upper foreleg and shoulder of the animal, further up and further forward than a loin or rib chop. Because the shoulder does more work, it develops more fat, more marbling, and more connective tissue than the cuts most people default to. That’s what gives it flavor, and that’s also what requires a little patience at the pan.

They’re typically blade-cut, which means you’ll see a cross-section of the blade bone running through the center. Bone-in, well-marbled, and priced well below the rack.

🔪 Ingredients for Pan-Seared Lamb Shoulder Chops

  • Lamb shoulder chops: look for chops about ¾ to 1 inch thick with visible marbling. Shoulder chops have a blade bone running through the center, which is normal and adds flavor during cooking. If you’re in the Fresh Thyme Market region, you can find these in the meat case by Freedom Run Farms.
  • Kosher salt and black pepper: season generously. The crust depends on it.
  • Olive oil: high smoke point enough for the initial sear. Avocado oil works too.
  • Unsalted butter: the star of the baste. It browns in the pan and carries the garlic and herb flavor directly onto the meat.
  • Garlic: fresh cloves, chopped. Jarred garlic won’t give you the same punch.
  • Fresh rosemary and thyme: chopped. These bloom in the hot butter and perfume the entire baste. Dried herbs burn too quickly at this heat.
  • Lemon wedges: a squeeze of acid right before serving brightens the richness and cuts through the butter.

📝 How to Make Pan-Seared Lamb Shoulder Chops

  1. Pat the lamb shoulder chops completely dry with paper towels. Moisture on the surface steams instead of searing, and steam means no crust. Season both sides generously with salt and black pepper.
  2. Heat a cast iron skillet over medium-high until it’s properly hot, about 2-3 minutes. Add the olive oil and let it shimmer. If it smokes immediately, pull it off the heat for 30 seconds and lower the burner slightly.
  3. Place the chops in the hot skillet and don’t touch them for 4-5 minutes. You’re building the crust here, and moving the chops too early tears it off the surface. You’ll know it’s time to flip when the edges are browned, and the chop releases cleanly from the pan.
  4. Flip the chops and immediately add the butter, garlic, rosemary, and thyme to the pan. The butter will foam and start to brown. As it melts, tilt the skillet slightly toward you so the butter pools on one side.
  5. Baste continuously for 3-5 minutes, spooning the melted garlic-herb butter over the top of each chop in a steady rhythm. You’re layering flavor with every pass. Pull when the internal temperature hits 130-135°F for medium-rare or 135-145°F for medium. The chops will feel springy, not firm.
  6. Transfer the chops to a plate and rest for 5 minutes. Carryover heat will push the temp up another 3-5°F, and the juices redistribute so you don’t lose them on the cutting board. Serve with a squeeze of fresh lemon.

🔄 Substitutions & Variations

  • Lamb loin chops work with this method but cook faster (they’re leaner). Reduce searing time by about a minute per side and watch the temp closely. Our air fryer lamb chops use a similar seasoning profile if you want a hands-off option.
  • Thyme only or rosemary only is fine if you don’t have both. Skip dried herbs entirely for this recipe.
  • Ghee instead of butter for a dairy-free option. You lose a bit of the milk solid browning, but the baste still works.
  • No cast iron? A heavy stainless steel skillet holds heat well enough. Nonstick won’t give you the crust. But, we swear by cast iron for a good sear and have been using this pan for over 15 years.

💡 Meat Nerd Tips

  • Dry the surface aggressively. If you skip this step, the chops will steam, and you’ll get a grey exterior instead of a golden crust. Press both sides with paper towels.
  • Don’t crowd the pan. Two chops in a 12-inch skillet is the max. More than that drops the pan temperature, and you’re braising, not searing.
  • Tilt and baste with intention. The basting isn’t decorative. Each spoonful of hot butter carries garlic and herb flavor directly into the surface of the meat. Keep the rhythm going for the full 3-5 minutes.
  • Shoulder chops vary in thickness. The blade bone means the meat is uneven. Use an instant-read thermometer in the thickest section, not near the bone, for an accurate read.

🧊 Leftovers and Storage

Store leftover chops in an airtight container in the fridge for up to 3 days.

Reheat in a 300°F oven for about 8-10 minutes until just warmed through. The microwave will overcook the edges and dry out the meat, so avoid it.

These are best eaten fresh, but sliced cold over a salad works surprisingly well. Heck, we’ve been known to nibble onthem bold right off of the bone.
